Step 1 Place all bread ingredients in a mixing bowl, use paddle blend or kneading it to become a dough. The dough will be kneaded to produce a thin layer of dough.
Step 2 Wrap the bowls with plastic wrap to perform the proofing and fermentation for about 60 minutes at 28°C room temperature. Keep the skin of dough moisturized by spraying some water.
Step 3 A: 350g Milk, 350g Dairy Whipping Cream B: 15g Earl Grey Tea Leaves C: Mix 70g Sugar and 100g Egg Yolk to dissolve, add in 30g My Day Home Made Bread Series Flour and mix well
Boil the ingredients A and add in the ingredient B to soak for 15 minutes, then filter and boil again, and add in the ingredients C. Then heat it using a low heat , keep stirring until it becomes think liquid. Turn off the stove and finally add in 30g cream and mix well.
Step 4 Divide the dough into 60 each and make each to a round dough.
Step 5 Let the dough rest for 15 minutes. Keep the skin of dough moisturized by spraying some water.
Step 6 Flatten the dough and warp in 10g-15g boba.
Step 7 Perform the final proofing and fermentation for about 60 minutes at 35°C environment.
Step 8 Egg wash the surface of the dough, cut the surface of dough like a self-shaped opening as pic shown above. Put the dough into a deck oven with upper heat at 190°C or lower heat at 160°C, bake for 8 - 10 minutes.
Step 9 Let bread to cool, then add in the milk tea custard filling into the hole and put some boba and cookies for decoration.
